Umami is considered the 5th taste sensation. It goes along with sour, bitter, salty, and sweet. IN the early 1900's umami was discovered in Japan and it mean "delicious". Umami is usually associated with salty and cured foods, along with Mono-sodium-glutamate, or MSG. Umami is often called a "product of the food industry" due to the high content of MSG in foods. Be wary when you eat certain foods because there may be some MSG in there to enhance the flavor!
