We all know that our sense of smell can influence the perception of taste for the food that we eat. Researchers have recently published an article in the Journal of Experimental Psychology: Human Perception and Performance in which they talked of how extreme noise conditions can influence taste perception. The experiment tested the five basic tastes in two settings, one setting had the simulated cabin noise of an airplane which was about 80-85 decibels, and the other setting had normal ambient room noise. Participants took a survey in which they tasted sweet, salty, sour, bitter, and umami solutions and rated them on a scale. The researchers found that the noise had no effect on salty, bitter, and sour, the noise suppressed the salty flavor and enhanced the umami flavor.
